RED WINE AND CRANBERRY GLAZED SALMON

Thanks to Frea's Farm Winery for providing their dry red wine, "Blood, Sweat, & Cheers" to make this delicious glazed salmon.

Combine cranberries, red wine , sugar, orange peel, cinnamon stick and salt in a medium saucepan; bring to a boil
Reduce heat to maintain a simmer and cook, stirring often, until most of the cranberries have burst, 10 to 12 minutes
Remove the orange peel and cinnamon stick. Cool
Arrange salmon on a foil covered sheet tray
Season with salt and pepper
Set oven to broil and cook salmon for 6-8 mins under broiler
At end of cooking add the cranberry sauce on top of the salmon and finish cooking under broiler for another 1-2 minutes
