RED WINE AND CRANBERRY GLAZED SALMON
Thanks to Frea's Farm Winery for providing their dry red wine, "Blood, Sweat, & Cheers" to make this delicious glazed salmon.

Ingredients
- 14 oz bag fresh cranberries
- 1 Cup dry red wine
- ½ C sugar
- Two, 1x4 in strips orange peel
- One, 3-inch cinnamon stick
- Sockeye salmon, portioned 1 lb
- Salt TT
- Pepper TT
Instructions
- Combine cranberries, red wine , sugar, orange peel, cinnamon stick and salt in a medium saucepan; bring to a boil
- Reduce heat to maintain a simmer and cook, stirring often, until most of the cranberries have burst, 10 to 12 minutes
- Remove the orange peel and cinnamon stick. Cool
- Arrange salmon on a foil covered sheet tray
- Season with salt and pepper
- Set oven to broil and cook salmon for 6-8 mins under broiler
- At end of cooking add the cranberry sauce on top of the salmon and finish cooking under broiler for another 1-2 minutes
