  • 3-4 halibut portions
  • 6 medium sized carrots
  • 2 medium sized zucchinis
  • 14 tablespoons butter
  • 1 clove of garlic
  • ¼ cup dry white wine
  • ½ lemon
  • ½ Salt & pepper to taste
  • ½ Parsley to garnish
  • ½ Extra virgin olive oil

Instructions

  1. Preheat your oven to 350 degrees and line a sheet pan with parchment paper.
  2. Cut up your carrots and zucchini, place on sheet pan, and drizzle with EVOO then season with salt and pepper.
  3. Bake for 25 minutes.
  4. Using a lidded sauce pot on medium heat, melt 14 T of butter.
  5. Add in one clove of garlic and the 1/4 cup of dry white wine.
  6. Bring to a low boil for about a minute.
  7. Add in your halibut portions then season with salt and pepper.
  8. Cover with a lid and bring to a low boil, flipping the portions if they are on the thick side. Cook time should be around 6-7 minutes.
  9. Place veggies on a plate, top with a portion of halibut, and then drizzle the butter sauce overtop. Enjoy!
