  • 2 Sockeye Salmon Portions
  • 2 Tbsp Butter
  • 1 cup heavy cream
  • ½ cup sun-dried tomatoes
  • 1 Tbsp garlic powder
  • ½ cup Parmesan cheese
  • A handful of roughly chopped basil
  • ¼ tsp oregano
  • ¼ tsp thyme
  • ¼ Salt & pepper to taste

Instructions

  1. On low heat in your favorite cast iron pan, melt butter, then add the Parmesan cheese and heavy cream.
  2. Add in the diced sun-dried tomatoes, oregano, thyme, and basil.
  3. Add in the thawed sockeye salmon portions, skin side down.
  4. Salt and pepper your portions to your liking.
  5. Sprinkle the portions with the garlic powder.
  6. Cover the portions and cook on medium-low heat for 10 minutes; you are essentially poaching the salmon portions in the sauce.
  7. The salmon will be finished at 145 degrees, when it starts to turn pink and flaky.
  8. Serve with the sauce and enjoy!

Notes

This recipe is an easier version of the Marry Me chicken recipe, as deglazing the pan is not necessary, and chicken stock is not needed. This recipe is naturally gluten-free and can be made dairy-free by swapping out butter, heavy cream, and Parmesan for dairy-free alternatives.
