PACIFIC COD & EGGS

This one pan method of cooking eggs and seafood is a European favorite. Quick prep and quick clean up make this recipe ideal for on-the-go folks who want to make the most out of their morning!

5 eggs
5oz wild-caught Pacific Cod
1 small onion, chopped
3 TBSP Olive Oil
1 TBSP flour or corn meal
1 TBSP Garlic, chopped
1 TBSP butter
1 tsp dry mustard
1 tsp fresh parsley
2 oz white wine
1 tsp lemon juice

Instructions

Caramelize onion and garlic in olive oil over medium heat until just browned
Deglaze pan with white wine
Bread cod lightly in flour or corn meal
Add butter to pan, melt
Gently place coated cod in buttered and onion pan
Whip eggs, lemon juice and dry ingredients- and additional herbs and spices as desired
Slowly pour egg mixture around cod portion
Cook gently ensuring the egg doesn't overcook or get stuck to the pan
Continue cooking until done: about 5-6min
