PACIFIC COD PICCATA

  • 4T Butter, softened   
  • 1 pound wild Pacific Cod
  • ⅓ cup lemon juice
  • 1 teaspoon lemon-pepper seasoning
  • ½ teaspoon garlic powder
  • 2T All Purpose Flour
  • 2 teaspoons capers
  • ¼ Cup dry white wine
  • ⅓ Cup chicken stock
  • Minced fresh parsley, optional

Instructions

  1. Preheat oven to a broil. Arrange the thawed Pacific Cod on a 9x13 baking tray. Season the fish with a few sprinkles each of lemon juice, lemon pepper, and garlic powder.
  2. Broil in a hot oven for 7-9 minutes or until fish flakes easily.
  3. Meanwhile, in a small pot, heat the wine, chicken broth, and lemon juice to just the start of a boil. Then reduce the heat to a simmer.
  4. Work the flour into the 4 tablespoons of softened butter.
  5. Using a whisk, begin to add this butter mixture into the hot liquid, stirring constantly.
  6. Once thickened remove from the whole pot from heat. Season with salt and pepper as needed.
  7. Dress the fish with sauce & sprinkle with chives and parsley.
  8. Serve with pasta, polenta, or rice. Enjoy!
