Nicole is the in-house Chef at Wild For Salmon as well as a Recipe Developer and Food Photographer from Allentown, Pennsylvania with an Associate degree from The Culinary Institute of America. Her first memories are of planting seeds with her father and grandfather in their elaborate gardens and sharing their abundant harvests with friends and neighbors. The spark of both pride and joy she felt when sharing this food with others and seeing the happiness it brought them was what inspired her to pursue the culinary arts from a young age. Salmon Frittata

A quick, delicious meal to spice up any brunch! Try with out canned or shelf stable smoked salmon for a meal that will have you full and satisfied!

Ingredients

  • 1 Can of salmon or smoked shelf stable salmon
  • 6 Eggs
  • ½ Cup Milk
  • 1 Small bunch Leafy greens, julienned
  • Orange peppers, diced small, to taste
  • 1 Shallot, minced
  • 1 Small bunch Parsley
  • 1 Small bunch Kale
  • 2 Tsp Mustard
  • Salt and Pepper, to taste

Instructions

  1. Preheat oven to 375.
  2. Chop julienne and mince the parsley, kale and shallot.
  3. In a large mixing bowl add eggs, milk,  mustard and salt and pepper and whisk well.
  4. In a medium pan that is oven safe, sauté shallot and pepper.
  5. When soft add egg mixture, sprinkle julienned greens and salmon in.
  6. Move the pan to the oven for 18-20 minutes. The sides should be slightly brown and the egg mixture should set.
  7. Enjoy!
