Strawberry Salsa and Balsamic Salmon

 

Strawberry season in the summer is a favorite here in Pennsylvania, especially since you can grow them in your backyard or get them fresh at your local farmers market. Wherever your favorite place to get strawberries is, make sure you get your hands on them so you can make this salmon with strawberry salsa! Oh, and did we mention the salmon is also baked with a balsamic glaze for that extra summertime flavor?

Just as fruits pair well with salmon, they make a great addition to a fresh summer salsa. Combined with simple ingredients like jalapenos, green and red onions, and lime juice, and sweet, succulent strawberries, this recipe for strawberry salsa will spice up your summer. Chef's Notes

Nothing says summer like fresh fruit. Salmon pairs so well with fruit, that I have got to share this Strawberry Salsa and Balsamic Salmon recipe with you. My local market had strawberry infused balsamic vinegar and I knew immediately that it would make a nice glaze on the salmon portions from Wild for Salmon.

With fresh strawberries in season, I wanted to top the dish with a fresh salsa that screams summer. I had previously made a peach salsa which paired so well with this salmon that I knew the strawberries would also work.

You can either double the salsa recipe and serve the dish with tortilla chips, or make a nice green salad with fresh strawberries to serve with this dish. I like to make a salad dressing with these fancy fruit infused balsamics with equal parts olive oil and the balsamic. I just add a squeeze of Dijon mustard to make it emulsify and shake it in a jar.
