The fresh parsley, cilantro, garlic, and lime create a bold sauce that complements the naturally sweet flavor of wild shrimp without overpowering it. Serve the skewers over rice, alongside a crisp salad, or with grilled vegetables for a meal that's fresh, flavorful, and simple to make.

 

Easy Substitutes

One of the best things about this recipe is how flexible it is. If you're missing an ingredient, there are plenty of easy swaps.

  • No cilantro? Double the parsley or substitute fresh basil for a different flavor.
  • No honey? Maple syrup or agave work well.
  • Red wine vinegar: Apple cider vinegar or white wine vinegar makes an excellent substitute.
  • Fresh lime: Lemon juice can be used in a pinch.

  • 1 lb Wild Gulf Shrimp, peeled and deveined
  • 5 skewers
  • ⅓ cup extra virgin olive oil
  • ½ bunch parsley
  • ½ bunch cilantro
  • Juice of 1 lime
  • 1 tablespoon honey
  • 1 clove garlic
  • Pinch of salt/pepper
  • ¼ teaspoon crushed red pepper
  • 3 tablespoons red wine vinegar

Instructions

  1. Preheat your grill to a medium heat.
  2. If using wooden skewers, soak in water for 15 minutes before grilling.
  3. In a blender or food processor combine all ingredients except the shrimp and blend until liquid consistency.
  4. Remove the shells from the shrimp and devein.
  5. Place shrimp in a bowl and add in 1/2 of the chimichurri sauce and coat evenly.
  6. Place the shrimp on the skewers, 4 to a skewer.
  7. Grill each side for 5 minutes, the shrimp will turn pink, be careful not to overcook as they will turn rubbery.
  8. Serve skewers over rice, salad, etc.
  9. Drizzle with leftover chimichurri sauce.
