Smoked Salmon Cobb Salad

A colorful summer salad featuring Wild for Salmon's Garlic Pepper Smoked Sockeye Salmon, sweet corn, ripe tomatoes, creamy avocado, and a fresh basil vinaigrette.

For the Salad

  • 8 oz (2 packs) of Wild for Salmon's Garlic Pepper Smoked Salmon
  • 4 cups spinach or mixed greens
  • 1 cup cherry tomatoes, halved or 2 large tomatoes, cut into wedges
  • 1 ear sweet corn, cooked and kernels removed from cob
  • 1 ripe avocado, sliced
  • 3 hard-boiled eggs, quartered
  • ½ medium red onion, thinly sliced
  • Fresh basil leaves, chopped

For the Basil Vinaigrette

  • ¼ cup olive oil
  • 2 tablespoons red wine vinegar
  • 2 tablespoons fresh basil, finely chopped
  • 1 teaspoon Dijon mustard
  • ½ teaspoon honey
  • Salt & pepper, to taste

Instructions

  1. Prepare the basil vinaigrette by whisking together the vinegar, basil, Dijon mustard, honey, salt, and pepper. Slowly whisk in the olive oil until combined.
  2. Arrange the greens on a large serving platter or divide among four bowls.
  3. Top with the smoked sockeye salmon, tomatoes, cherry tomatoes, sweet corn, avocado, hard-boiled eggs, and red onion.
  4. Drizzle the basil vinaigrette over the salad and finish with an extra sprinkle of chopped basil.
  5. Serve immediately and enjoy.

Notes

-For extra flavor, grill the corn before cutting the kernels from the cob.

-Add crumbled bacon or blue cheese for a more traditional cobb salad variation.

-Serve with crusty sourdough bread for a complete summer meal.
